INGREDIENTS:
1 cup loosely packed watercress leaves, coarsely chopped
1/2 cup vegetable oil
2 garlic cloves, chopped
2 tablespoons capers
3 teaspoons fresh tarragon
2 tablespoons sherry vinegar

INGREDIENTS:

1 cup loosely packed watercress leaves, coarsely chopped

1/2 cup vegetable oil

2 garlic cloves, chopped

2 tablespoons capers

3 teaspoons fresh tarragon

2 tablespoons sherry vinegar

2 tablespoons fresh lemon juice

3 tablespoons olive oil

2 tablespoons mayonnaise

INSTRUCTIONS:

Combine the watercress, vegetable oil, garlic, capers and tarragon in a processor or blender and process until blended. Add the vinegar, lemon juice, olive oil and mayonnaise and process until smooth.

Serves 4 to 6.

PER SERVING: 260 calories, 0 protein, 1 g carbohydrate, 29 g fat (4 g saturated), 3 mg cholesterol, 88 mg sodium, 0 fiber.
